White Fortress is a cauliflower variety characterized by a longer sowing window and wider adaptability. The plant is very strong, erect, and tall, producing a high dome, smooth, and compact curd. It offers good weight with high yield and features very good self covering, which helps keep the curd white. This variety is recommended for the temperate season, specifically from September to November.

The curd is a High Dome smooth curd and is Milky White in color. It is classified in the Temperate segment. Curd weight typically ranges from 1250 – 1500 gm. The curd is Compact, and self-covering is Very good. Curd maturity occurs quickly, approximately 75–80 days after transplanting (DAT). The curd has a field holding capacity of 8–10 days. The recommended sowing season according to the Package of Practices is Winter.
