The potatoes are infected with rubbery rot, a fungal disease caused by Geotrichum candidum.
It typically happens when potatoes are harvested from waterlogged soil and stored in warm, damp conditions. The fungus enters through wounds or bruises.
There is no chemical cure; control is primarily through prevention, such as harvesting dry, healthy potatoes and storing them in a cool, well-ventilated area.
